Pour twice the coffee weight in water (30 ml for 15 g). Stir gently. Wait until bubbles slow.

Slow spiral pours

Pour remaining water in circles, keeping the bed wet. Finish pours by 2:00 on a timer.

Drawdown complete

Bed should flatten by 3:00–3:30. Remove dripper, taste, adjust grind finer if sour or coarser if bitter.
